Sesame oil is divided into small-milled sesame oil and machine-pressed sesame oil according to the production method. Machine-pressed sesame oil is produced at high temperature, and the nutrients it contains are destroyed and lost under high temperature and high pressure. Therefore, the nutritional value of machine-pressed sesame oil is lower than that of small-milled sesame oil.
Small-milled sesame oil is a traditional local specialty. In Anhui, Hebei, Shandong, Henan and other places, it is still brewed using "small grinding discs" and ancestral techniques. It emphasizes the "washing, frying, grinding, and scalding" pure manual and additive-free production process, and its scientific name is "water substitution method". Small-milled sesame oil is ground by stone mill and extracted by water substitution method (below 100 ℃). It is a pure physical method for oil production. Compared with modern oil production processes such as pressing method and solvent method, it has the advantages of low operating temperature and less loss of nutrients and flavor substances. The product is amber in color, rich in fragrance, and has a long taste, which is deeply loved by the people.
